
INGREDIENTS
- 8 slices wheat bread
 - � cup my favorite pesto
 - 4 ounces mozzarella, sliced
 - 10 spinach leaves
 - 1 avocado, sliced
 - � cup crumbled goat cheese
 
INSTRUCTIONS
- Spread pesto over half of bread slices.
 - Layer on spinach, mozzarella, avocado, and goat cheese.
 - Top with bread slice and make using traditional stovetop grilled cheese method or (my preference) in a panini maker.
