Alternatively, you can melt in over a small pot of boiling water (Not a lot of water in the pot) and put the chocolate chips it in a heat proof and melt proof bowl over the pot and stir until melted.
  2. In a medium bowl, whisk the flour, salt and baking soda until combined. Set aside.
  3. In a separate bowl, add the flax eggs, sugar and oil and mix until combined for about 2 minutes. Add the water and the vanilla extract. Add to the dry mixture to the wet mixture and melted chocolate chips and stir for about 3 minutes until combined.

  1. Pre-heat your oven to 400 degrees. On a large rimmed baking sheet, toss the cauliflower florets, chickpeas and garlic cloves (just leave them whole) with 3 tablespoons of the olive oil and the cumin, salt and paprika. Roast in your pre-heated oven for 30 minutes, stirring once half way through. Remove from your oven and set aside. Reserve about 1/2 cup for the garnish.
  2. Meanwhile, heat the remaining 1 tablespoon of olive oil in a large pot over medium heat. Add the cubed potatoes and black pepper. Cook for about 2 minutes, stirring frequently. Add the vegetable broth and the water and increase the heat to bring the mixture to a boil. Once boiling, turn the heat down to maintain a simmer. Simmer, uncovered, until the potatoes are very soft, about 15-20 minutes. Remove the pot from the heat. Stir in the roasted cauliflower mix.
  3. Puree the soup using an immersion blender. Alternatively, you can use a food processor or blender, working in batches if necessary and being careful when transferring and blending hot liquids. Return the pureed soup to the stovetop and gently re-warm it. Stir in the heavy cream. Season to taste with salt and pepper.

INSTRUCTIONS

  1. Add the olive oil, lemon juice, garlic, oregano, salt, and pepper to a large zip top bag, or a large shallow dish. Close the bag and massage to combine the ingredients, or stir the ingredients in the dish until combined.
  2. Filet each chicken breast into two thinner pieces. Place the pieces in the bag or dish, making sure the chicken pieces are completely covered in marinade. Marinate the chicken for 30 minutes up to 8 hours, turning occasionally to maximize the chicken's contact with the marinade.
  3. When ready to cook, heat a large skillet over medium flame. Transfer the chicken from the marinade to the hot skillet and cook on each side until well browned and cooked through (about 5-7 minutes each side, depending on the size of the pieces). I cooked two pieces at a time to avoid over crowding the skillet, which can cause juices to pool and prevents browning. Discard the excess marinade.

  1. Preheat oven for 350 degrees. Cream the butter and sugar until soft about 3 minutes. Add in the vanilla, and then the eggs one at a time and mix until each is incorporated.
  2. In a separate bowl, mix together the flour, baking soda, baking powder, cream of tartar, nutmeg and cinnamon. Add the flour mixture and the sour cream alternately to the egg-butter mixture, scraping the bowl occasionally.
  3. Using an ice cream scoop, scoop out muffin batter one at a time and drop into a shallow bowl filled with the cinnamon sugar mixture. Roll the �ball� of batter around in the mixture until it is covered completely in cinnamon sugar, and then place into a prepared (either greased or with liner) muffin tin. (Each ball of batter should fill about 3/4 of a muffin tin.) Depending on the size of your tins, you should get about 14 to 18 muffins. Bake them for approx. 20-22 minutes or until they are golden brown.

Pour into egg mixture and stir to combine. Pour in vegetable oil, milk and vanilla extract. Divide batter evenly into 12 muffin cups, filling each about 3/4 full. Bake for 15-18 minutes, until a tester inserted into the centre comes out clean.
  2. While muffins are baking, melt butter and pour remaining sugar into a small bowl. When muffins are done, lightly brush the top of each with some melted butter, remove from the pan and roll in sugar. Cool on a wire rack.

  • Cauliflower: 
  • 1 cup gluten-free flour (can sub regular flour, spelt flour�etc.)
  • 1 cup almond milk
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 head of cauliflower, cut into florets

INSTRUCTIONS

  1. Preheat the oven to 450 degrees F and line a baking pan with parchment paper
  2. Mix the flour, almond milk, salt and pepper together in a bowl until smooth.
  3. Dip each piece of cauliflower into the batter, let any excess batter drip off then place the cauliflower bites on the baking pan.

INGREDIENTS
  • 1/3 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • zest and juice of 1 lemon
  • 2 cloves garlic, minced or grated
  • 1 teaspoon dried oregano
  • 1/2 cup mixed Italian olives, pitted
  • 2 tablespoons chopped pickled jalape�os
  • 1 pinch black pepper
  • 1 loaf ciabatta bread, halved lengthwise
  • 1/4 cup fresh basil, roughly chopped
  • 6 thin slices spicy salami
  • 6 thin slices prosciutto
  • 6-12 thin slices pepperoni
  • 6 slices provolone cheese
  • 8 ounces fresh mozzarella cheese, torn
  • 1 red or orange pepper, roasted and sliced
  • 1 cup baby arugula


INSTRUCTIONS
  1.  Preheat the oven to 400 degrees F. 
  2. To make the vinaigrette. In a jar or small bowl, whisk together the olive oil, red wine vinegar, lemon zest, lemon juice, garlic, and oregano, until combined. Add the olives, jalape�os, and a pinch of pepper. 
  3.  Lay the bottom piece of ciabatta bread cut side facing up on a baking sheet. Spread the vinaigrette over the bread. Layer the basil, salami, prosciutto, and pepperoni on top. Add the provolone and mozzarella. Transfer to the oven and bake 10 minutes, until the cheese begins to melt. Remove from the oven and add the arugula, bell peppers, and top half of the ciabatta bread. Gently cover the sandwich with foil and return to the oven and bake another 10 minutes more, or until the cheese has melted. Remove the foil and cook an additional 5-10 minutes, until the bread is toasted.

Intructions

  • 1/4 - 1 tsp butter flavoring (depending on brand) I like LorAnn. You may question if this step is worth it - but it is!
  • 1 tsp vanilla I love Genie's Dream Clearly Not Vanilla, it has great flavor and no color (so it won't tint your icing).
  • 2 tbsp fresh lemon juice In real life I never measure this. I just use the juice of whatever lemon(s) I used in making my cookies. This is optional, but the lemon really cuts the sweetness of the icing nicely.
Interections

  1. Continue to mix for about 3 minutes on high - your icing will start to turn white and have a fluffy look. But do NOT over mix. Over mixing can cause the icing to collapse. This will yield a VERY stiff icing. If you feel it is too stiff even to start with, add small amounts of water.
  2. But it is best to start with very stiff icing for a few reasons. If you are going to store it at all before using, the less water, the less it separates. When you color your icing, this adds liquid, so you may regret adding too much water to start with. Add your color, and then your water to bring it to the consistency you want.   • 2 large eggs

DIRECTIONS

  2. In a large skillet over medium-high heat, heat oil. Divide mixture into 4 patties in the pan and press with spatula to flatten. Cook until golden and tender, about 3 minutes per side.

  • 2 teaspoons ground cinnamon

  • 2/3 cup apple cider
  • 1/3 cup heavy cream

DIRECTIONS:

  1. Generously season the chops with salt and pepper on both sides. Set aside.
  2. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Immediately add the pork chops and cook until brown, about 3 minutes per side. Transfer to a plate and set aside. Let chops rest for 3 minutes.
  3. Return the skillet to medium-high heat and melt 1 tablespoon of butter. Immediately add the apples and onion and cook, stirring occasionally, until the onion is translucent, about 5 minutes. Stir in the brown sugar, cinnamon and cayenne. Stir in the apple cider and cream. Add the pork chops, nestling them into the liquid, and cook until the internal temperature of the pork reaches between 145 degrees F. (medium rare), with a 3-minute rest, and 160 degrees F. (medium), 3 to 4 minutes per side.

INSTRUCTIONS:

  1. Preheat the oven to 180*C/350*F./gas mark 4.  Butter a 1 litre/1 Qt casserole dish and set aside.Put the potatoes and beans into a bowl.  Melt the butter over medium heat. Add the onion and celery and cook for several minutes until softenedwithout browning.  Stir in the flour and cook for a further minute.  
  2. Slowly stir in the milk and cook, stirring constantly, until bubbling and thickened.  Stir in the cheese to melt.  Season to taste with salt and black pepper.  Pour over the potatoes and beans.  Mix to combine well 
  3. and pour into the prepared casserole dish.  Crumble the crackers over top.  Crumble the bacon over the crackers.Bake in the preheated oven for 30 to 35 minutes, until well heated through, bubbly and golden brown.  Serve hot.
