This versatile Loaded Veggie Salad is EASY to make and is packed with healthy ingredients, such as chickpeas, black beans, tomatoes and avocados. This salad is a delicious lunch, wrap filling, party side or even a topping for chicken!
INGREDIENTS:
- 15-oz. can black beans, rinsed and drained
- 15-oz. can chickpeas (garbanzo beans), drained
- 15-oz. can diced tomatoes
- 15-oz. can corn, drained
- 4-oz. can diced green chiles
- 1 red onion, chopped
- 1 green bell pepper, seeded and chopped
- 1 jalape�o pepper, diced (optional)
- 1/4 cup chopped fresh cilantro
- Juice from 2 limes
- 1/4 cup olive oil
- Salt and pepper, to taste
- Avocado slices, for topping
INSTRUCTIONS:
- Combine all ingredients (minus avocado) in a large bowl. Mix well. Cover and refrigerate until ready to serve. Top with avocado slices just before serving.
